My oldest daughter turned 2 this month! It is amazing to me how fast the time really does go. And it just seems to go faster the older I get. I set to thinking about what I could do for Eve’s birthday and came up with the idea to do a Minnie Mouse birthday party! She loves Mickey Mouse Clubhouse, and for all parents out there, once you’ve heard that opening song for MM (as we refer to it in our house for “code”) you won’t forget it! Funfetti cupcakes topped with strawberry cool whip frosting with OREOs made to look like Minnie Mouse! (what a mouth full!) I’m calling them Skinny Minnie’s because the cake itself is only 2 ingredients and from what I have been told it is the weight watcher version of making a cake. Super easy cupcakes to make and they are so super cute! Did I also mention they are really moist!
Skinny Minnie Cupcakes:1 Box Funfetti Cake Mix
12 oz can of Diet 7up or Sprite Zero
Preheat oven to 350 degrees. Combine these two ingredients until smooth. Place batter in cupcakes. I filled them 2/3 full. Place in preheated oven for 20 minutes. Cool completely before frosting.
Strawberry Cool Whip Frosting:1 (8oz) Cool Whip
1 (1.5oz) Strawberry Cream Instant Pudding
Allow the cool whip to thaw before adding the strawberry cream instant pudding packet. Stir the pudding (just the powder) into the cool whip until completely combined. Place the strawberry cool whip into a zip lock baggie and snip the bottom right hand corner to use it as an icing bag. Once completely frosted I added OREOs and OREO mini in the shape of a Minnie Mouse.
*Tip: Place the OREOs on before serving, if they are on the cupcake to long they become a bit soggy. Remember to place the unused cupcakes into the refrigerator for storage.
